Puyallup native Scott McLean is the new executive chef at Emerald Downs. McLean brings over three decades of experience to Emerald Downs and is a graduate of the Culinary Institute of America in Hyde Park, New York. He will be responsible for developing a menu and all activities that occur in the kitchen/dining operation at Emerald Downs. He most recently was culinary professor and leader of the Culinary Arts Program at South Puget Sound Community College. He also had a 10-year stint with Ram International as regional chef overseeing operations in nine of the company's restaurants, and was executive chef at Marcus Whitman Hotel and Conference Center in Walla Walla.
